Happy ONE Year

I’ve been waiting for this picture to pop up all month. Today is officially the one year anniversary of my first Selfish Mom Project.

I honestly never thought my own little project would ever create the impact it has. I started the project because I was suffering with postpartum depression and anxiety and I thought maybe if I took everyone else out of the equation I could feel better.

Miraculously I did start feeling better. 🙌🏼 Over the next 60 days I documented my journey and shared it with the world and was blown away by the emails, comments, and support. I never realized the impact I was making or even the amount of moms also going through the same thing I was.

This picture was the start of not just a new life it was the start of MY LIFE. The part where I found my inspiration. My purpose. Myself again.

I’m ready to share my daily journey again with you all and so officially I’ll be starting a Selfish Mom Project again on November 1st! I encourage every mom out there to join me!

Anyone struggle with this word?
 
I find when I let my anxiety get the best of me THIS word is usually a huge culprit for it.
 
When negative thoughts creep in…this word usually is floating around there somewhere trying to be first in line on the negative train.
 
When something positive happens – THIS word is the word that use to sit in the back of my head, arms waving plaguing me and making think I wasn’t ‘enough’ to have all this good stuff happen.
 
I’m here to remind you on this amazing wonderful Monday morning that you are indeed enough.
 

You were perfectly designed my God to be enough.

 

You are worthy of all your goals and dreams.

 

You are a good mom, even on the days you don’t feel like and the exhaustion is too much.

You are enough even if your kid has a runny nose, grass stains on their knees, and their hair doesn’t look brushed (even though they said they brushed it).

You are enough even if someone tells you that you aren’t.

You are enough no matter what Pinterest and the other experts say.

YOU ARE ENOUGH. 

You are enough, you are loved, you were designed to be great just as you are.

Embrace all of it.

Spicy Spaghetti Squash Boats

Spaghetti squash is amazing. It’s like having an affair on pasta but not having the super bloated feeling after or feeling bad because it really is that good and so versatile.

It’s a food affair I can get down with 😂

This little boat is filled with spicy sausage (regular sausage is great too I just like spicy), kale, cherry tomato and spaghetti squash. That’s it! Nothing complicated. Most of The process is completely hands off even which is a huge plus in my book!

I’m super simple in how I cook my spaghetti squash. Four steps

1. Preheat over to 405 degrees

2. Cut squash in half and dig out all the goodies and toss

3. Set on cookie sheet and season with pepper & pink Himalayan salt (must have in the kitchen!)

4. Cook for 30-40 minutes depending on desired doneness. I like mine a little crunchy so it stays in for 32 minutes.

After squash is done cooking I turn the oven off and leave it in a bit to keep it warm and start cooking the rest.

Serves 2

1 spaghetti squash

1/2 lb of sausage (spicy or not your preference)

1 cup of cherry tomato’s chopped in half

2 big handfuls of kale

I like as little dirty dishes as possible so I cook everything in one pan. Start with sausage add to pan and break apart while cooking with a wooden spoon. Right before it’s done add cherry tomato’s to pan and cook for about another 2-3 minutes or until they start to get soft, next add kale and mix all together while cooking.

Run a fork over spaghetti squash halves so it looks like pasta and transfer to a bowl add sausage and veggies and mix all together, transfer back to empty squash halves.

Cooking time: 40 minutes

Hands on time :15

Pair with a nice wine and a smile and your husband is going to think your Wonder Woman and offer to give all the kids a bath and clean the kitchen. Your welcome.
