Quick & Easy Sausage & Peps

I’m not a good cook. I’ll be 100% honest with you. I never really watched my mom or grandmothers in the kitchen. I loved the art of conversation, not cooking. I wish I was better at it and I’m planning to learn to be better. But when your husband’s Italian who grew up in a restaurant…Somethings are just better left for him to do ensuring we all don’t starve to death.

Last weekend he was out of town camping with our daughter Sophia. They go about four times a year and Jay and I get the weekend to ourselves. This was the last weekend of camping where it would just be the two of us. A little bittersweet considering in the fall we will have a sweet baby boy joining us. We had big elaborate plans to go out on a dinner date just us two, but I could tell by 4pm taking and exhausted toddler out in public was not a good idea.

Thankfully I had some groceries in the house and whipped this amazing dish in about 10 minutes.

What you need

Sausage (I love mild Italian sausage from Mulay’s they are gluten free!)

1-2 Bell Peppers Sliced (we love red and orange to bring some color in)

1/2 Red Onion Sliced

1 Cup of Mushrooms Sliced

To Make:

  • Super healthy alternative way to make the sausage was taught to me by my mother in law (She actually is an amazing Chef!) Fill a pan with water and bring to a boil, poke holes in the raw sausage and throw it in the boiling water. Boil it long enough to get the outside color changed and this actually drains the excess fat out. Once the color is changed drain all the water out of the pan and brown the sausage to your liking and until done.
  • While the sausage is cooking in another pan spray with coconut oil spray and throw in first the peppers. Let them cook for about 3 + minutes and then throw in onion and mushrooms. Let all them cook together for about five minutes.
  • Next when sausage is done cut into pieces and throw them all together and into a bowl. I love topping mine with a nice dose of siracha because why not and I love spicy stuff. 🙂

(Note: Jay loves vegetables but only if they are raw. We can not get this kid to eat cooked veggies of any kind. This is one of those easy dinners though where I’m not making a completely different meal and instead just set a couple of raw veggies on the side for him and cook the rest for myself.)

Self Love Reset Week 2: Mastering Independence

So thankful for everyone following my journey this month. Only one week in and I’m feeling SO much better, but there’s still more work to be done. Which brings me to week two of this wonderful month.

This week was actually a little harder to decide. Realistically my goal this month is to make life less chaotic and bring in more peace and joy both to myself and of course I would love for this to rub off on my family as well (and hopefully you too!).

As I was doing my make up this morning I hear my son screaming from our playroom down stairs, “MOOOOOOOMMM.” In a panic I run as fast as I can thinking there is an emergency…no he wanted me to get his iPad for him…on the other end of the couch. Literally 17 inches away from him. I didn’t and he screamed my name for that and other things the following 20 minutes. Insert my idea for week two.

It would be easier to just blame this on my kids, but I’m about being honest and I CREATED this chaos for both my kids. I baby them. Get them everything they need. Drop everything when they need my attention and then in return I often resent them, raise my voice, and am not the mother I want to be because nothing gets done, I’m two little peoples personal servants, and those two little people have said my name about fifty million times all day and by 5 pm I want quite, silence, and a big glass of wine (I miss happy hours). This is chaos that weighs on my bad. Makes life chaotic and is often times when I say yes (when I should say no) to things just to keep the peace. It’s not serving anyone in the house.

So this week we are practicing Independence. Doing it yourself. Each person in our house will:

1. Get Yourself Dressed2. Put away your own laundry3. Grab your own snacks4. Clean Your Own Mess 5. Clean Up your spot at the table

We are starting with this but will take suggestions in the comments if you have them. LOL. Some of you might think this is harsh and some of you might think I’m ridiculous for it taking me this long to implement, but if I just had a little help with this stuff above it would leave me calmer, more at peace, and more time for the things that matter like fun adventures and snuggles where I’m completely present with my family. Not too mention a new baby coming in August.

This will be challenging and there will be lots of resistance I’m sure so wish us luck!

Friday Favs: Second Trimester Addition

Thought I would try and share with you peeps every Friday somethings that are blowing my mind right now (in a good way!). Being pregnant these favs are mostly going to center around that for the next couple months. 🙂

#1 Bio Oil – There are tons of oils that mommas can use to prevent stretch marks or lather up with to make that growing skin feel better. I’ve used TONS and this stuff through each pregnancy has been my favorite. Once you enter the second trimester the directions say to apply it twice daily. I put it on first thing in the morning and then let it dry a bit while I’m putting on my makeup and getting ready and then again before I go to bed. I love this stuff!

#2 Halo Top Ice Cream – I’m a pretty healthy eater but lets be serious, I’m pregnant and at the end of the day a little ice cream treat is often on the agenda lol. This stuff is amazing and actually pretty healthy!! Not only is it low in calorie but also super high in protein and low in sugar. Good stuff to fight the craving AND not indulge in too much guilt. By far my fav is the Peanut butter cup.  So far I’ve found it at Target, Walmart, Tom Thumb, Kroger, and of course Whole Foods.

#3 Active Maternity Workout: I’m happy to report that I have been able to maintain an active lifestyle so far while pregnant while mostly from home. These Active Maternity Workouts are based on the different Trimesters so they are tailored to each woman and even have a postpartum workout to help you get up and moving after little baby comes. They are each about 20-30 minutes and involve little equipment (just light weights) and can be streamed for any device. Adding them into my current yoga & pilates routine twice a week has been amazing. The workouts are lead by celebrity trainer Autumn Calabreeze (creator of 21 Day Fix and 21 Day Fix Extreme) and can be found with tons of other programs for maternity and postpartum through the all-access challenge pack. #4 Pregnancy Pillow: If you haven’t got one of these do yourself a huge favor and get one. Your welcome. I got this super cheap one from Amazon for $39.99. There are several different ways you can sleep with it, but as your body grows sleeping becomes more and more uncomfortable, this is a huge help. I use the Boppy Pregnancy Support Pillow and love it. Plus its not taking up the entire bed leaving no room for your husband.

#5 Epsom Salt Baths: I’m embarrassed to admit this is totally new for me. At 32 years old I had never taken an epsom salt bath. After my first trip to a Chiropractor last week they told me I had to take a bath and soak in Epsom Salt for 20 minutes after. I felt so relaxed and amazing after I’ve done it several times since and making this a weekly routine. Add a candle and my favorite book and its even more magical. Pregnancy can cause serious aches and pains in the body and this is a great non-invasive way to rid your body of toxins, ease muscle pains, and relax. My favorite is HERE.

Big Magic: Creative Living Beyond Fear by Elizabeth Gilbert (Review)

This book was everything I didn’t expect it to be. It popped up when I least expected it to which is usually how books do, and honestly it took me forever to read. Not because it was long or boring, but I truly believe there were some parts that I just needed to wait a minute to read till they fit that moment of my life. Parts of me weren’t ready for that change yet, so I needed to read slower. By the time that part of my life hit and I got to that sweet spot in the book, I could not put this book down.

I love telling stories and writing. I like to think I’m good at at least one of those. In almost 33 years of life I have met some crazy interesting (and sometimes just crazy) people, and had some crazy amazing, sad, hilarious, happy, spiritual things happen to me. I’ve been told countless times to ‘write a book’ but currently right now I don’t feel that’s where God is taking me. Right now.

This ‘season’ of life with two kids, a busy schedule, and being pregnant my mojo for story telling and writing was nonexistent. Which is why the lack in updating my blog or siting down to write just wasn’t happening. Depression took over and sitting down to write or do anything frankly that I loved felt like dread instead of joy. My creative juices were gone.

Big Magic gave me the creative kick in the booty I (and this blog) so needed and I have to share my 5 biggest take aways from this book in hopes that whatever rut your in it helps.

#1 You don’t need to ‘suffer’ for your creativity – Suffering is the opposite of happiness. Your creative outlet (whatever that may be!) should bring you JOY not pain. Quit thinking starving artist and instead think creative genius. Just changing the the though process of what your about to do in your mind can make a HUGE difference.

#2 Have an Affair with Your Creativity <3 – Think of when your watching a movie and there are two actors having a love affair. They sneak away to meet and romance, find hidden staircases and never let a moment of their time together be distracted by anything else because that time is limited. Be like that with your creativity! Take it to dinner, romance it, when its your time to spend with it put your phone away and only concentrate on IT.

#3 Quit Pressuring Your Creativity to Pay the Bills –  This was a big one for me. Obviously I would love my blog, writing and story telling to play a significant role in my income. Thats the plan! But the pressure I was putting on my creativity to come to life was way to much to actually make that happen. If all your life you have wanted to be an artist and paint the day away – thats amazing- but give yourself a back up plan or gig so that all the pressure isn’t on your creativity.

#4 Quit Asking for a Permission Slip – Your creativity is just that its YOURS and no one else’s. Who care about what your doing. If it feels good and beautiful and is lighting your fire then keep on. Your not hurting anyone else so quit waiting for some one to give you permission to do what makes you happy.

#5 Stop Complaining – Complaining leads to negativity and negativity leads inspiration and creativity leaving the brain. We all have that friend that just nothing ever goes right in her life. Why is that? Why can just not one thing go right for them? Probably because their mindset is stuck in complaining mode instead of positive thoughts that lead to amazing inspiration.

There were so many other nuggets that I’m sure I will share over the next couple months when I need to remind myself of them. This book was amazing and a must read for anyone struggling with a lack of inspiration in life.
